THE SHORT ANSWER
呢 ni1 points toward this, while 嗰 go2 points toward that; they normally appear in a larger expression such as 呢個 or 嗰啲. 個 can identify one item when the noun is understood, while 啲 can refer to a plural or an unspecified amount. The expression can point to something visible or refer back to something in the conversation.
呢個: identify the one thing being discussed
呢個辣唔辣㗎 asks whether this item is spicy. The food noun is not spoken, so the context must make the target clear. At a menu or counter, pointing could do some of that work.
Try the written pair below with two imaginary dishes. The grammar stays the same while the target moves. If a listener cannot tell which dish you mean, knowing the words accurately is not enough; add a clear noun or point to the item.

呢啲 and 嗰啲: think about the group
呢啲係人生必經階段 talks about these stages or experiences. 嗰啲係你嘅問題 refers to those problems. Neither line depends on physically touching an object: the target may be a set of matters already under discussion.
For a comprehension exercise, write the missing earlier sentence in English. What experiences could someone have mentioned before 呢啲? What problems could 嗰啲 refer back to? Label this your imagined setup, not a hidden translation of words missing from the clip.

Do not treat 啲 as an exact count
啲 does not itself tell you whether a set contains two items or twenty. It can also be used with an amount rather than a set of individually counted objects. Learn the full noun phrase so that English these or some does not become a rigid translation rule.
呢啲唔係我搞得掂 refers to matters beyond the speaker’s capacity. The line leaves their exact number and content to context. Drawing three objects to help you remember the phrase is a study aid, not evidence that 啲 means three.

Use a clear target before shortening the phrase
CUHK’s noun-phrase examples show demonstratives with different classifiers, such as a classifier suited to a table or a school. 個 is a useful familiar pattern, not a universal replacement for every noun’s classifier.
Practise in two passes. First label a target with a complete phrase you know. Then hide the noun and check whether the remaining expression is still clear in your mini conversation. If there are several plausible targets, restore the noun. The point of shortening is to use shared context, not to force the listener to guess.
